Can DJ LED lights work without a DMX board?

I’m trying to do uplighting for my wedding, and I am interested in having LED par cans or pinspots. But will they operate correctly without the DMX board?

Yes, they will work just fine. You cant do all the neat things without a DMX controller but all most every LED par can on the market will allow you to set it’s color by adjusting the dip switches on the light.
